Homemade Crockpot Baked Beans with Pineapple


Homemade Baked Beans
My first time making baked beans from scratch! AND..using my new 4 QT crock pot.

*The measurements of brown sugar, molasses, and maple syrup, in the recipe are just a basic guideline. If you like your beans sweet (like I do) feel free to tweak the measurements and add more or less of a certain ingredient. For me, the Vienna Sausage is a must as well as the added pineapple chunks I put in as I'm dishing up the servings.

Servings: A crock full of yummy beans!
Ingredients:
  • 1 lb Great Northern dried beans
  • 1/2 cup brown sugar
  • 1/4 cup Vermont Grade A maple syrup
  • 1/4 cup molasses
  • 1 small onion, chopped
  • 2 tbs ground mustard
  • few dribbles of Liquid Smoke
  • 1 6 oz can tomato paste
  • Can of Pineapple Chunks
  • 2-3 (5 oz) cans of Vienna Sausage Hot & Spicy
Instructions:
  • Sort, rinse, and wash beans. Put beans in crockpot. Cover beans with water plus a few extra inches.
  • Add the rest of the ingredients EXCEPT for the last 3 ingredients. Cover and cook on HIGH for 3 hours. Then turn crock to LOW and cook for aprox. 8 hours or until beans are tender.
  • Open cans of Vienna sausages. Pour contents into bowl. Cut sausages into small bites and add sauce and sausages to crock. Cook for 2-3 more hours. Last hour or so cook WITHOUT cover to let sauce thicken.
  • Empty excess liquid off beans. Add the pineapple chunks as you are dishing up the beans. Optional: mix in some Apricot Pineapple preserves in your beans too. Yum! What's even better is putting the cooked beans in a container and waiting until the next day to reheat and eat. I almost like them better the next day:)
